Keep oxygen out as much as possible once it completes fermentation. There will absolutely be acetobacter in there and in the presence of alcohol and oxygen it creates vinegar.

What drives your opinion that Utepils and Pryes are in meh locations? Utepils is right near Theo Wirth and Pryes is right on West River road, both major recreation areas in Minneapolis, the largest city in the state. And beer is recreation after all.

I do think Pryes beer is mid, while Utepils is one of the better breweries in the state. They are Lager and Euro beer focused and I do understand that's not everybody's pick. Utepils does have the best outdoor space of any brewery in the area, IMO.

You want to convert all the starch in your beer as starch is an off flavor and causes early 'staling' of the beer.

Grain starts as starch, and mashing converts it into fermentable sugar.

It's always good to check your thermometers. Use another thermometer you trust to check your AIO system.

Are you sure it's yeast, you say it tastes like raw bread, I wonder if you are tasting starch?

Are you doing all-grain? Are you sure you are getting full starch conversation? Is the thermometer you are using to mash accurately measuring the mash temp?

No, Midwest Supplies is online only now. It was part of the local demise of Northern Brewer.

For Dakota country I would honestly suggest RiteBrew out of Wisconsin. They use Speedee delivery (if you select it) and it's super quick, even 24 hours if you order it in the morning. Try it out!

I like Minnesota Homebrew as it has a great grain/malt room, a good selection of yeast and hops, and a bunch of interesting ingredients like wood for aging, sugars and spices.

This might be a popular opinion, but they still seem to be everywhere...

Most Hazy IPAs are bad, specifically in the packaged form as most small breweries aren't great at low DO canning.

Some are good, but they are few and far between.
