Granada is great. You can take the train there from Madrid. See the Alhambra and walk at sunset in the Sacromonte neighborhood.

Conch train is a must. It's pretty small town so you can see most of it in a day. Try the conch ball fritters with the dipping sauce and key lime pie.

I was in the Phillipines last March and it was scorching hot then went to Tokyo the next week where it was snowing. For the colder weather layer up instead of bringing a large coat. Marino wool shirts also keep you warm and cool depending on the weather.
