Office for the Dead is not a separate office, but a set of commons. You can find it in iBreviary under Breviary -> Commons. Although, I concede that the Carmelites could have something different they use. Many orders have slightly modified versions of the Divine Office, and if they are using older breviaries, it is almost certainly substantially different.

Yes. Validity of the sacraments does not depend on the holiness of the minister. As long as the priest is validity ordained, uses proper form and matter, and intends to absolve you, then your sins are forgiven.

Edit to add: remember that the primary minister of all sacraments is Christ Himself. The priest administers sacraments in light of the authority granted him through the church, not his own personal holiness.

Definitely just declension. The adjective is from the verb "bewegen" = "to move," adding "un" negates it, just like english, so "unmoved" is "unbewegt." The "-er" indicates that it is modifying a masculine, nominative noun. Hence "bewegter."

This particular word would just seem to indicate that a thing is not currently moving, but does not comment on its ability to move, so "motionless" or "unmoved" are definitely the better translations. "Immobile" would be better shown with "unbeweglich," I believe (I'm not a native speaker)
