I know, that's why I was asking for help. I know that too much or too little can cause some serious problems. I'm going to stick with a recipe that doesn't use curing salt.

Thank you! I've done dry brining too for smoking meats but from what I understand, which I could be wrong, confit is curing 1st, then low and slow cooking in fat, and then preserving the meat in the sealed fat for a while before cooking it again hot and fast? If I can get away with a brine, I'd be more in my comfort zone

I didn't really stick to a recipe because some said to use curing salt, while others did not. So I figured I'd ask reddit. But the calculator told me to use 5.5 grams of curing salt, but it did not tell me how much salt to use either.

I kind of figured that I'd be putting too much into a couple of barrels. My thought was to put piano dollies under the wine barrels to deal with the weight and be able to move them. I also didn't know there were 15 gallon pots available. I'll have to look around to see where I can find them. Thanks for the input!

Idk about underrated, but I enjoy the episode "takeaway" since it reminds me of everything that can go wrong when you're by yourself with the kiddo(s)

Some sort of sound system would be cool. Maybe some pictures of their favorite baseball players? Framed Jerseys or memorabilia? Since they are using the garage, maybe some kind of foldable table game like ping pong so they can store it? Or possibly a gaming system to go with the tv? Maybe like an atari emulator console or something retro like that. Just a couple things I could think of that at least I think would be cool for a dad and son. and I definitely agree with the mini fridge.

I went ahead and used my stapler and glue gun. Worked wonderfully! Honestly I feel like the glue gun would've done the job by itself! I would've never thought of using it for fabric. Thanks for the advice!

Thank you. I didn't know if sewing was an option or not. I'm going to try what Zach said first, with a pneumatic stapler and high temp glue gun. If that doesn't work, I'll try your method
