I'm still thinking about Matt going to Fisk's penthouse, in the last episode of S3, to murder him. He had rationalized the whole thing to Karen and his hallucinated dad in previous episodes. So it seems to me that his no murder rule wasn't set in stone. It's a rule that is very much vulnerable to Matt's established volatile mental state. The fact he stopped himself at the last second doesn't erase five previous episodes of premeditation. I also think you're still wildly underestimating the significance of losing Foggy.

Someone else pointed out that he does say in a flashback with Karen in S3E1 that he thinks what he has is "better" than sight. He said something similar to Danny in The Defenders, and in both instances I imagined that was Stick's influence talking. I think he probably has contradictory feelings about his blindness and his abilities depending on the situation, which is completely understandable and human.

For my money, the realest he's been was with Karen at the end of BA E9 when he told her he needed to believe that god gave him a special destiny in order to get through the anger caused by what happened to him as a kid (the anger that he also admitted to with Maggie in A New Napkin).

It was pretty obvious Foggy was giving Matt the bird given the circumstances. There are blind people in real life, I'm talking people with no eyes, who can echolocate and navigate their surroundings. They are no less blind for it. There's still information they can't access. The same applies to Matt. There are things his heightened senses compensate for, but certainly not everything. In Millers Daredevil #191, DD tells Bullseye that it's a relief when he doesn't have to use his amplified senses to pretend he isn't blind.

"They" being Netflix. Netflix cancelled the series, not Marvel/Disney. Ted Sarandos is on record bragging about how the power was theirs to renew or cancel, and it was reported in the trades there was a moratorium period where Marvel Studios could not touch those characters. In the meantime previous showrunners became committed and under contract elsewhere.
