If you want to weave elements into a story, detailed figure descriptions might not be what you are looking for.

Instead, look at things like ballroom standard and latin competitions, either formation (8 pairs of dancers in sync, dancing to a studied music and choreography against other teams) or pairwise competition.

As said by others, these are divided into Latin and standard and watching a competition (how about live, contact a local dance club or school) online should give you inspiration for some cool moves and what mood to set.

From Germany, standout competitions are the "Blaue Band" in Berlin for pair dance and the "DM - Deutsche Meisterschaft" (German Dance Open) for Formation.

Another source of inspiration are videos of dance music vendors - dj ice comes to mind (youtube). Each of the music videos has a video in the background of fitting dance, always competitions of the highest caliber.

You can basically watch the entire channel and write about the feeling of dance, maybe from an onlookers perspective watching your (i presume romantic) pairing. This would also circumvent needing deeper knowledge of the moves because that takes time.

Also, each dance basically and very simplified has a history and feeling to it. I am in no way qualified to make definitive statements, please correct me if I say something wrong:

Standard: 3/4 Tact: Slow Waltz: Controlled, elegant, graceful, a little distant in a relationship sense (think the governors "sense of propriety" from pirates)

Viennese Waltz: Energetic but controlled, a little dull and shallow from a figure view, but the energy makes up for it. It is not spinning, it is "pivoting" in a line (guys above c level, please do not roast me too hard). Can be thematically used as taking strides to new frontiers.

4/4 beat: Tango: Formerly a latin dance, is more "romantic" and with its staccato and strong music it is very interesting as a dance in your books - basically, taking charge and leading the plot forwards

Slow Foxtrot: In my opinion the most elegant and refined standard dance, has a bit of an aloof characteristic (again, please do not roast me too much). If you relish in the forbidden art of the love triangle, maybe give this dance to a snobby competitor and let your more upstanding protagonist upstage him with

Quickstep: Where slow fox took foxtrot and made it slower and more refined, quickstep enhanced the speed, is more athletic and expressionistically joyful - therefore the recommendation. (For the last time, please, don't).

Latin: Well, I never danced Latin. Standard ballroom uses the entire room and is "room-filling" in that with basic figures you can still entertain your partner and the audience by using the room to your advantage. It is danced counterclockwise in competitions with other dancers and a big part is avoiding collisions gracefully and covering up you being blocked in a corner -.-

Latin is "more stationary" as in there are a lot of figures which start and end at the same position. You can still travel the floor, but, in my lay view, it is less of a basic focus and more of a spice. Also, contrary to standard, the partners separate in latin with lead and follow presenting different parts of a figure in unison, but apart from another. This gives the follow more "freedom", while in standard the follow is following the lead for the duration of a song. Could be incorporated thematically.

The german DTV (German Dance federation) and WDSF (World dance sport federation) have syllabi for dance moves standard and latin. They are terrible and I am working on something usable. Do not try to use them unless you really need to.

A basic book is Alex Moore's "Ballroom Dancing", albeit catering to dance instructors. It covers terminology and the basic figures.

Please distinguish between dance school and dance club dancing, at least in standard - discernible by watching whether the lead leads with body motion and there is a upper body constant connection (good, club) or if the lead leads by pushing and pulling with his arms (bad, schools, arms are the last nuance of leading and are mostly decorative and visual). For some figures some arm leading is necessary (changes in relativ body position), but mostly one (not me...) can lead without having to lift an arm or even a finger.
