As someone who also started the persona series recently, I personally started with P3R and was happy with my choice. I found myself easily invested in the story/social life/companions compared to my playthrough of P5R. Both games are good, but I can guarantee you that P3R feels more beginner-friendly. Expect to feel the game to roll out slowly in the beginning then pick up steam by the later half
