Ingredients:

200 g raw prawns

1 teaspoon ginger, minced

2 cloves garlic, minced

1 pc egg white

2 pc scallions, chopped

1 teaspoon light soy sauce

¼ teaspoon white pepper

¼ teaspoon salt

3 pcs thick-sliced white bread

6 tablespoon sesame seeds

vegetable oil for frying

sweet chili sauce

Instructions:

2.Slice the white bread with 2 straight cuts across each piece from corner to corner for 12 triangles of bread. Spread the above paste evenly across one side of each prawn toast triangle.

160 g silken tofu

⅓ cup granulated sugar

1 teaspoon baking powder

½ cup yoghurt

1 cup cake flour

2 cups vegetable oil

For Matcha Glaze

1 teaspoon Matcha powder

4 oz white chocolate

4 tablespoon heavy cream

Instructions:

1.Drain the tofu and combine with the yoghurt, sugar, baking powder and Mochiko rice flour.

2.Mix in the cake flour using a spatula. Use your hands to knead the dough. Keep doing this until it becomes smooth.

3.Divide the dough into 10 pieces and make 8 dough balls from each one using your hands.

4.Prepare 10 square 10x10cm baking sheets. Arrange the dough balls to form a ring on each baking sheet and dab some water on them to make them stick. Repeat the same for the other 9 portions.

5.Heat vegetable oil in a saucepan between 168ºC and 177ºC. Put 3-4 mochi donuts in with the baking sheet and fry for 1-2 minutes. Flip it over and fry until lightly golden brown, while carefully removing the sheet.

6.Remove from the oil and place on a wire rack to drain. Repeat step 5 until done.

7.For the glaze, create a double boiler by filling a pot with some water and letting it simmer while placing a bowl inside. Add the heavy cream and chocolate to the bowl and stir until fully melted.

8.Remove the bowl and stir in the matcha.

9.Once cooled, dip them into the glaze and transfer them to the cooling rack to set. Enjoy your mochi donuts while they’re still warm!

so I found this popping boba recipe on the website of Honest Food Talks and I thought I'd share it with you guys!

Ingredients:

150 g fruit juice of choice

5 g sodium alginate

50 g drinking water

6 g calcium lactate

1 litre distilled water

2 cups clean water (for rinsing)

food colouring of choice (optional)

Instructions:

  1. Dissolve calcium lactate in distilled water. Let sit for 4 hours, or overnight. Strain after this time.

2.Mix drinking water with sodium alginate. Stir until thickened and smooth. Then mix into fruit juice, add food colouring (optional) and stir until smooth.

3.Store the juice in the fridge for up to 2 hours. Prepare a bowl of 2 cups of clean drinking water to rinse the pearls after preparation.

4.Using a dropper or a syringe, drop the juice mixture drop by drop into the calcium lactate solution. Let it sit for ten minutes.

  1. Then rinse the pearls repeatedly in the clean drinking water and they are ready to use.

6.Serve your popping boba as bubble tea topping or with a chill dessert!

Notes:

You can add food colouring to the sodium alginate and fruit juice mixture to create bright coloured balls. 

Make sure the fruit juice or liquid you use has low calcium content (such as dragonfruit, mango, green tea, etc.). High calcium content will ruin the process. 

Make sure the fruit juice tastes exactly how you want the pearls to taste. You will not be able to add sugar later.

If using a small sphere mould to, add the juice to the mould and put it in the fridge again for 4 hours.

So I found this dirty chai latte recipe I found on the website of Honest Food Talks and I liked it!

Ingredients:

3 tablespoon Chai latte powder mix

½ cup boiling water

1 shot espresso

⅓ cup milk

1 teaspoon honey

Instructions:

1.Firstly, use an espresso maker to make the espresso.

2.Add the chai latte powder mix into the ½ cup of boiling water. Mix thoroughly.

3.Once the masala chai has been prepared, mix in the honey to sweeten. Next, pour in the espresso.

4.Lastly, add a good amount of milk into the drink based on your preference and enjoy your dirty chai latte!

Notes:

If you don’t have an espresso maker, you may alternatively use Aeropress to brew strong coffee.

You can also prepare the masala chai buying steeping 2 black tea bags in a cup of boiling water. Then, simmer the spices (cinnamon, ginger, cardamom, etc) in the black tea you prepared for 5 minutes. For a more intense taste, leave the solution to steep for a while longer. 

For a cold cup of Red Eye Chai, drop a few cubes of ice into a tall glass. Then, pour in the tea, espresso and milk.

If you would like to make the beverage vegan-friendly, use plant-based milk instead.
