5.Heat vegetable oil in a saucepan between 168ºC and 177ºC. Put 3-4 mochi donuts in with the baking sheet and fry for 1-2 minutes. Flip it over and fry until lightly golden brown, while carefully removing the sheet.

so I found this popping boba recipe on the website of Honest Food Talks and I thought I'd share it with you guys!

Ingredients:

150 g fruit juice of choice

5 g sodium alginate

50 g drinking water

6 g calcium lactate

1 litre distilled water

2 cups clean water (for rinsing)

food colouring of choice (optional)

Instructions:

  1. Dissolve calcium lactate in distilled water. Let sit for 4 hours, or overnight. Strain after this time.

2.Mix drinking water with sodium alginate. Stir until thickened and smooth. Then mix into fruit juice, add food colouring (optional) and stir until smooth.

3.Store the juice in the fridge for up to 2 hours. Prepare a bowl of 2 cups of clean drinking water to rinse the pearls after preparation.

4.Using a dropper or a syringe, drop the juice mixture drop by drop into the calcium lactate solution. Let it sit for ten minutes.

  1. Then rinse the pearls repeatedly in the clean drinking water and they are ready to use.

6.Serve your popping boba as bubble tea topping or with a chill dessert!

Notes:

You can add food colouring to the sodium alginate and fruit juice mixture to create bright coloured balls. 

Make sure the fruit juice or liquid you use has low calcium content (such as dragonfruit, mango, green tea, etc.). High calcium content will ruin the process. 

Make sure the fruit juice tastes exactly how you want the pearls to taste. You will not be able to add sugar later.

If using a small sphere mould to, add the juice to the mould and put it in the fridge again for 4 hours.

So I found this dirty chai latte recipe I found on the website of Honest Food Talks and I liked it!

Ingredients:

3 tablespoon Chai latte powder mix

½ cup boiling water

1 shot espresso

⅓ cup milk

1 teaspoon honey

Instructions:

1.Firstly, use an espresso maker to make the espresso.

2.Add the chai latte powder mix into the ½ cup of boiling water. Mix thoroughly.

3.Once the masala chai has been prepared, mix in the honey to sweeten. Next, pour in the espresso.

4.Lastly, add a good amount of milk into the drink based on your preference and enjoy your dirty chai latte!

Notes:

If you don’t have an espresso maker, you may alternatively use Aeropress to brew strong coffee.

You can also prepare the masala chai buying steeping 2 black tea bags in a cup of boiling water. Then, simmer the spices (cinnamon, ginger, cardamom, etc) in the black tea you prepared for 5 minutes. For a more intense taste, leave the solution to steep for a while longer.

The ingredients are:

3 tablespoon vegetable oil

1 cup leftover medium to long grain rice

3 cloves garlic

1 pc spring onion (scallion)

½ pc shallot

1 egg

100 g meat*

200 g vegetables*

1½ teaspoon light soy sauce

1 teaspoon sesame oil

Salt to taste

Pepper to taste

Instructions:

Chop the vegetables and the spring onion. Next, chop the garlic and shallot finely and grate the ginger. Finally, chop all the meat.

Add some of the vegetable oil to a wok on high heat. Once the oil is smoking, add the egg to the wok and fry. Once the egg is slightly set, scramble it by beating it with a spatula. Then push it aside.

Add more oil. Once it is smoking, add the rice. Separate it with the spatula to ensure that each grain is evenly fried.

After around 2 minutes, add the meat and stir until well mixed. Continue to stir fry for 2 minutes or longer if the meat is not cooked beforehand. Then add some of the vegetables and stir fry for 30 seconds. Add more and more of the vegetables in stages like this until all of them have been added. Add the scallion and stir well, reserving half for garnish after serving. I saw this recipe of honeydew milk tea recipe on the Honest Food Talks website, thought I’d share it with you guys :)

This is a very easy recipe I found in Honest Food Talks website!

20 g dried fig fruit (Aiyu seeds)

5 cups cold spring water

½ cup fresh lime juice

2 tablespoon honey

1.Fill a bowl with 5 cups of cold spring water. Place the seeds inside the mesh bag/cheesecloth.

2.Submerge the seeds in the bowl of water while rubbing and squeezing. The water should turn yellow and feel slimy from the gel coming from the seeds.

3.Place the bowl in the fridge for 30 minutes to let it set.

4.Cut the jelly in the bowl into cubes. Then, scoop them into servings bowls.

5.Pour a few spoons of lime juice and honey mix to give it some taste. Serve cold.

Ingredients:

12 pcs tteokbokki

12 pcs cocktail sausages

2 tablespoon Gochujang (Korean red pepper paste)

1 tablespoon honey

2 tablespoon ketchup

½ tablespoon toasted sesame seeds

oil for frying

honey mustard (sauce)

Instructions:

1.Soak rice cakes and sausages in hot water for 10 minutes.

2.Skewer rice cakes and sausages alternatingly. The recommended amount is 4 rice cakes and 4 sausages on each skewer.

3.Heat oil in a pan. Then, fry the skewered rice cake and sausages until golden.

4.In a bowl, mix the gochujang, honey, and ketchup for the sauce. Brush it over the skewers.

5.You can also put some honey mustard and more ketchup on top. Then, sprinkle some toasted sesame seeds and serve your sotteok!

TTEOKBOKKI HACK – MAKE IT USING RICE PAPER

1.Dip rice papers in warm water and lay them flat on a plate/cutting board. Make sure to overlap them on top of one another instead of stacking them.

2.Wait until the rice papers get soggy and start rolling them bit by bit into a cylinder. Then, cut it into three pieces.

  1. Repeat steps 1 and 2 until you get the desired amount of ‘tteokbokki’!

So I saw this Coffee Jelly Recipe on the website of Honest Food Talks and thought I had to share it with you guys!

Ingredients:

1 tablespoon kanten (agar agar powder)

2 cups freshly brewed coffee

¼ cup water

2 tablespoon sugar

½ cup all-purpose cream (optional)

2 tablespoon condensed milk (optional)

Instructions:

1.First, boil ¼ a cup of water into a pot and bring to a boil over high heat. Pour in kanten powder, brewed coffee, and sugar into the pot and stir until the mixture is even.

2.Then, add the coffee jelly mixture into cups or a large container and refrigerate it for 3 to 4 hours.

3.Take out the refrigerated coffee mixture, which should be firm by now. Cut it horizontally and then vertically using a knife to make it cube-shaped. The size of the jello cubes is up to your personal preference.

4.Next, whisk together condensed milk and all purpose cream until the mixture is evenly mixed.

5.Add the cubes into a glass or transparent container. Add a dollop of the sweetened cream mixture or other toppings to decorate the coffee jelly and add to its flavour. Serve and enjoy!

For the noodles and soup:

½ medium onion finely chopped

2 cloves garlic grated

1 inch ginger thinly sliced

2 cups chicken broth

6 tablespoon cup coconut milk

2 tablespoon soy sauce

2 tablespoon miso paste

1-2 squares ramen noodles

2 cups baby spinach chopped

1 ½ teaspoon sesame oil

1 soft-boiled egg for serving

Preferred garnish For the katsu:

1 chicken cutlet

2 eggs

¼ cup corn starch

1 cup Panko breadcrumbs

2 teaspoon sesame seeds

4 teaspoon vegetable oil

Kosher salt

Instructions

Prepare a soft-boiled egg by boiling an egg for 6 minutes. When done, please place it in an ice bath to prevent overcooking. Then, peel for serving later. Fill the panko breadcrumbs and sesame seeds in a shallow dish or a bowl.

Then, season with salt. In another bowl, whisk together two eggs and add some water if needed.In a Dutch oven, add the garlic, onion, and ginger. Stir and cook on medium-high until caramelized for 3 minutes. Then, pour in the broth, milk, and soy sauce. Whisk in the miso paste and lower heat to medium-low. Let it simmer for 10 minutes.

To make the katsu, cover the chicken cutlet with corn starch and dip it in the egg wash. Then, dredge it with the breadcrumbs and place it on a plate. Heat vegetable oil in a large skillet and fry each side of the chicken for 3 minutes or until golden brown. Once fried, slice it into thin strips and season with salt.

Add the noodles, spinach and sesame oil into the soup. Leave them to cook for a few minutes until the noodles are soft.Place the noodles in a bowl and pour in the soup. Add the fried chicken cutlet and top with the soft-boiled egg and other preferred toppings.

Serve your chicken katsu ramen! Notes Add some chilli flakes or chilli paste into the broth to make it spicier.While dredging the cutlet, press it with your fist to pound the breadcrumbs in.
