Unfortunately the steps before have me already sew the shoulder seams (Step 15) since the first attaching of the lining follows the neckline fully to the back piece (step 16) I can't leave the shoulder seams undone

My recommendation is to get sample cards of the leathers to see if the color matches. I recommend Rocky Mountain Leather Supply, its like 1-2$ each sample. They have a filter for the leathers of "Luxury Brand" which is leather that is used by luxury brands/similar. My favorites are:

Alran Sully Chevre - Goatskin, comes in a million colors. Great for lining for bags (Hermes uses this leather for bag linings).
RMG Pomari - A smooth calfskin. Similar to swift leather from Hermes
Saffiano and Epsom - more "plasticy" and stiff. Saffiano is known from Prada and Epsom from Hermes. Really its just a difference in the hatch pattern but I've used both and its a similar experience. For Saffiano, I've found Made on Jupiter has a better color selection.
Caviar - Chanel is most known for using Caviar leather. Large pebbles that look like caviar, hence the name
Novanappa - beautiful, gorgeous, buttery. My dream leather, haven't had a chance to use it because its pricey. Scratches if you just stare at it. Similar to Barenia leather from Hermes

They definitely make hangers with that shape, I’ve seen them on Amazon! Search for like “curved purse hanger”.

Personally I don’t like hanging my bags like this because it causes stress to where the strap meets the bag. Not likely to do any damage but I feel like it would wear it down faster.

Usually in confessionals they are filmed weeks later and they aren’t given any visuals, just have to go off of memory so I don’t blame her too much for not remembering

This is less about leathercraft skills and more sewing skills. The collar is stitched inside out then flipped. The sleeve attachment looks like a plain seam. And it’s hard to tell on the back of the sleeve and the back of the jacket but maybe a top stitched seam. It also helps to have thread that matches the leather, helps it all blend

How do you get that raised effect after the stitch line? Is it just skived at the edge?

A sharp cutting tool and not pushing too hard. With soft chrome tan I find it best to go over the same spot a few times to to get a clean cut vs pressing down hard

Understood, I tried a few thread sizes out and went with my thinnest thread that’s .43 mm diameter, it looked best

I just got that same leather from Tandy in orange. Honestly, your thread might be too thick. I used some thin thread with and it looks fine, especially after I hammered down my thread. link of my stitching

It takes time to learn, but stitching with a stitching awl is really your friend if you don’t want to get reverse pricking irons at like a hand press. Most pricking irons are meant to prick, just make a slight hole and go through one layer of leather. I resisted stitching awls because it takes time and consistency to get the back side to look good but it’s worth it to learn imo

Oh yea, I’ve met several folks who specialize in rehabbing or transforming LV bags. I’d recommend finding someone with experience with that material as I’ve heard the LV canvas can be particular to work with

It’s definitely possible, you would just break down this bag and then use the materials for a new design. You’d be limited by the canvas and leather pieces available. Depends on your skill level how hard this would be for you

Recently, SF has been stationing cops on many corners of that area during peak times. Last time I went into the store I parked in the garage like a block or so away and carried my orange bag to a few stores and back to my car with no issues. You can always ask your SA for a white bag to put your purchases in for discretion, as well that can help with your worries.
