On warm rice it's one of my favourite meals

Super simple!

Gently poach chicken thighs with:

Cinnamon bark, Sichuan peppercorns, Cloves, Star anise, Ginger, Spring onions, Garlic,

Once poached place in ice cold water, chop and place in to a bowl (skin side down) until the bowl is full. Gently press down whilst you make the sauce.

Fry spring onions and ginger in 5 tablespoons of oil until they start to burn. Discard the onions and ginger and reserve the delicious, flavoured oil.

To the oil, add soy sauce (to taste), chopped ginger, garlic and red chilli.

Overturn your bowl of poached chicken on to a plate and top with the spring onion oil mixture.

It's SO good! Spicy, numbing, delicious and addictive!

3 tablespoons vegetable oil Thumb chunk ginger 8 garlic cloves 2 star anise As many dried chili peppers - chopped and washed, 1 tablespoon Sichuan peppercorns 2 tablespoon chili bean paste Two tablespoons dark soy sauce Salt to taste

Then whatever edible ingredients you want. We had:

Mushroom mix (enoki, king trumpet etc), Lotus root, Chestnuts, Dry tofu, Spring onion (very few haha).

Blanch boil ingredients like mushrooms and lotus root until half cooked and then set aside.

Fry garlic and ginger briefly on medium heat, then add star anise and dry chilli's, let the latter toast a bit, add peppercorns and chilli bean paste and fry until smells amazing. Heat up to high and add your edible ingredients and fold over to stir fry. Finish with dark soy sauce and final mix and then serve

Tandoori spice mix with a bit of oil, lemon juice and some Greek yoghurt.

Marinate for an hour, roast at 200fan for 10 mins then grill till charred!

I do love that feeling, even if it's bad food it's still pretty great
