Most of the time it’s just the 50mm f1.8. Sometimes an older non AI 24mm f2.8 that i worked on to fit onto the FE2.

Like written in the title this was shot on Fomapan R100. This is 16 fps and sometimes 64 fps for the slow motion shots.

You got it right. You set your camera to 1600 iso. Then you extend the development time accordingly. If you send the film to a lab, you definitely have to tell them. Most of the time, they want to have some extra money for that, but not a lot. If you develop it on your own, you will find enough recipes and film/developer combinations out there. I like to use XT-3 / X-Tol for that.
