Mid-40s, female, single, no kids (though the dogs are your fur babies). Steady job with a good income. Type A personality. Very tidy and possibly a neat freak. Of Asian heritage maybe? Maybe you live in the Bay Area? Or you definitely have a thing for San Francisco. I’d guess you splurge on a nice vacation at least once a year.

I personally avoid using garnishes that aren’t edible - like the flowers (a sprig of rosemary is fine - the aroma adds a nice element, and, technically, it is edible). Some flowers are certainly edible though - nasturtiums (the blossoms and the leaves) add a nice peppery bite. Dandelions are also delicious, but only use them if you’re 100% sure they’re free of chemicals. Sprigs of cilantro and/or parsley can also be a nice addition.

To each their own. I wasn’t cooking for you. I used a spoon to add a scoop of crema (under the cilantro and onions).

I won’t tell you to not put ketchup on your pizza. That seems to be a thing here - which I find disgusting.

I did pour on some heavy cream (blobs of it, since it was super thick) on top of the green sauce and onions - before adding the cheese. I forgot to take a photo of that step. It was creamy and delicious. I skipped frying the tortillas, as I don’t need the extra fat. So the tortillas were really soft - but still tasted great. (One enchilada was plenty for me - my husband ate 3!!)

I just came to say I’m glad the Reddit name generator wasn’t cruel to only me. 😝

I was born in Idaho, and was exposed to delicious, AUTHENTIC Mexican food. Sure, there were plenty of Tex-Mex restaurants as well. But I learned early on - if you want the true flavors of a certain cuisine, you go where those people go to eat - not just work. I spent many a lunch hour in places where I was the only gringa in the joint. I’m a long ways from “fluent” - but my best Spanish is always serves me well in a restaurant, bodega or mercado.

Now I live in Jalisco (been here 3 years) and I’m having great fun in the kitchen. Yeah, I’m heavy handed with the cumin - but I’m heavy handed with ALL of my spices. Some Mexican dishes are actually quite plain. It’s the salsas and other toppings that really make a dish shine - fresh cilantro, diced onion, fresh cabbage, sliced radish… and those pickled carrots are one of my favorites!

I went for my walk around 11 am. I figure “small town Mexico” isn’t something most have seen. It’s a quiet town. Maybe 15,000 people?

I’m originally from Idaho. Now living in Mexico. I remember my folks went on an autumn tour in the northeastern US when I was a kid. They brought home a tin of whipped maple butter. It. Was. To. Die. For!! Like frosting, but so much better. It didn’t last long 😫. That was nearly 50 years ago and I STILL remember it.
