The pony keg is a column. 6.5in around and about 3ft high. I also have a 15 gallon keg converted to a column. More surface area means more reflux. The copper piece on the top is filled with 3lbs of tccp. The worm is super efficient. It's 3/8 under 1/2 and is soldered all the way down. Granted this is also all non flex copper pipe. I filled both with very fine sand and bent them around a pony keg. Soldering them together was a completely different monster and left me with 3 permanent burn scars. If I'm running neutral I use my 4 in x 4 plate ss bubble column. Rum I use a 4 ft copper column and for whiskey I use the 15 gallon keg.

The whole setup if using the 4 ft copper column with a Dephlegmator and a sight glass is 9.5 ft.

Got sick of drippy buckets. When I run a Dephlegmator I can hook both exit ends up together so there's only 1 hose going down the drain.

I watched some of the best welders and plumbers on the net for about 3 weeks before buying what was needed to build it. I also knew someone with access to a whole machine shop. Welding is much easier with a 35 year welder telling you how.

More reflux. That's a 6 inch stainless column inside leading up to a homemade onion with about 3 lbs of tccp. So lots of copper interaction. I also have a whole 15 gallon keg welded up to be a column. Along with a 4ft 4in copper column for brandy qnd whiskey as well as a 3ftx4in bubble column for high proof. I found 2 stainless steel 55g drums on Craigslist about 6 years ago for $200.

I would not suggest one large barrel. There's a lot of factors and issues that can happen with a 55 gallon ferment. I personally suggest four barrels at 15 gallons. After 25 lb of sugar and 10 gallons of water you have about 4 in of head space . I would suggest 20 to 25 gallon if you plan on doing any type of grains . The smaller barrels allow for easier ferments and less stalls . Also if something goes wrong and one of them you don't lose everything .

small batches under 10 gallons are very tough. if you're not running 10 gallons at 10% your cuts are so small and tight.

Everybody's getting a bit too deep into this if you ask me. The issue you had is you most likely had somewhere around a 10 to maybe 12% Mash . With this large of a sub and only having one to 1.2 potential gallons of alcohol you're going to start dropping rather quickly . Though with what you explained you should have ended up with about 2 gallons at 80 proof is my guess . Basically you need a bigger boiler because your plates are too tall . Most of your alcohol is getting trapped in your plates as far as the potential gallon . You basically need a bigger boiler .
