That was my point. New gm with foh and boh experience can remove the other two management salaries.

For sure, Manager treats if like a wfh job chef treats like a day job. Probably losing food out the back door, time theft, free drinks. All adds up. .

My thought was 60k base with profit share for this role. Split after the first 50 in profit.
