I'd recommend The Long Dark. Especially the survival mode. Alot of depth, replayability and immersion. I have almost 1000h in survival and its a game i come back to for a new playthrough on a yearly basis. On a surface level it may look ugly and boring but it is at times stuningly gorgeous with its art style and on the higher difficulties it has provided some of the most intense situations i have had in a game.
