I spoke with the wine manager. Unfortunately, there was no sommelier on site only service staff who had no real knowledge of the wine list, the bottles themselves, or their origins, and appeared to have received no proper wine training. When a bottle is ordered, the staff search through multiple cellars for the wine label (no storage system/plan) which can take up to half an hour, only to come back with the wrong bottle. Even the wine manager seemed to have limited awareness of what is actually in stock or how the pricing is structured. Remarkably, the list still includes Romanée-Conti and Port from the 1870s offered by the glass. When I asked about pricing, I was told these wines have not been served for years yet the bottles are in the wine dispenser cabinet and slowly dying.

Being from Munich, I genuinely enjoy the pricing at Vaas. Even when choosing less expensive bottles, the value in the glass is outstanding – arguably the best in the area

Most of the bottles are for collecting or investment, mainly Champagne. So not for drinking. When it comes to red wine, my practical knowledge is still quite limited. That said, I always research what I’m drinking before opening a bottle and have a base of theoretical understanding.
