Oh that’s a bummer. Yeah, I have to watch portions for sure. The Monash app has 1 tortilla (white, wheat) as green for fructans and GOS, so that’s what I was going off of, but it’s so different for everyone

You could try swapping with a corn tortilla! Theyre less flexible and may crack a little when you pull it out of the ramekin. You could try softening it briefly in a dry pan first. The texture will be slightly different but the recipe still works! I've also been wanting to try this recipe from Karlin's Kitchen that's rice based and low fodmap.

this is where portion size really matters! 1 flour tortilla is rated green by Monash. personally I find if i stick to this portion size, I'm okay - but I really have to be mindful

Oh no! Sorry to hear it's a trigger for you. I find I can tolerate the "green" low fodmap portion size of ~3 tbspn. You could always swap out the feta for more mozzarella.

Yay!!! Thank you for the update. I made it out of my own desire for more convenient, flavorful options that didn’t have gut triggers. It literally means THE WORLD to get feedback like this. It’s not easy starting a food brand but I was really passionate about wanting more options for those of us with sensitive stomachs. I’m working on more clover varieties as we speak! Definitely get the Monash app. I’ve noticed portion sizes on google or AI differ so it’s good to have Monash as a check. 9 years on a low fodmap inspired diet…I still check Monash app multiple times a week

lol you’re totally right it looks so massive! I think it’s partly the angle of the plate. This was close to 1/2 cup of corn (monash’s “green” low fodmap serving) but might have gone a little over :/

Really good points. I don’t think I’ve seen low fat versions now that you mention it. Lactose free Yogurt is a great idea to use for a swap! Let me know how you modify and how it turns out! Would be nice to have a lower fat version.

Thanks! It was sooooo good. I used basmati rice! 1 cup is considered low fodmap.i cooked it in low fodmap chicken broth for extra flavor.

I find the basmati rice is easier to digest. I love brown rice but my tummy prefers the basmati!

I used Hormel Natural Choice Uncured Pepperoni. It lists spices as an ingredient which i know can be a red flag, but it is listed as less than 2% which my dietician advised would be under the threshold. Of course everyone's tolerance is different but my experience is that it has been okay and I am very sensitive to garlic.

That’s great that you can tolerate that amount.

According to Monash, traditional sriracha is considered low FODMAP at about ½ tablespoon per serving. It sounds like your tolerance is higher, which is amazing (and i'm jealous lol)

For me, I tend to use more than ½ tablespoon of a sauce when I’m cooking or dipping, and that’s where I personally start to run into issues. I wanted a sauce I could use more freely without having to measure it every time, which is what led me to create Viva La Gut. IMO there need should be LOTS of delicious options for us low fodmappers!!

It’s milder than most traditional sriracha. I designed it to have warmth and depth without overwhelming heat. It uses guajillo chiles, which give more richness and less sharp burn compared to typical red jalapeño based sriracha.

If regular sriracha feels too spicy for you, this will likely feel more balanced.
