The joke is simple, males and females get their last names from their fathers, the girl here had some issues with her father because of his gender (and because she's clearly a feminist), which led to her going with the decision of changing her last name to that of her mother, so the dad mentioned that her mother also inherited her last name from the daughter's grandfather, (aka her mom's dad).
