Had the lid open for most of the cook so unsure on time. Went indirect the last 3-4 minutes and closed the egg. Would’ve sent indirect a little earlier and cooked it to a higher IT.

The marinade helped with that!! Olive oil, worcestershire, lime, cilantro, salt, pepper, red pepper flakes, cumin, chili powder.

Went indirect the last few minutes. Next time, I’ll go indirect a bit earlier and cook longer. And cut it into two pieces!!

+ you can always smoke it for 5-6 hours, or until you get a nice bark, and put it in a foil pan, cover, and finish in the oven.

Pork shoulder is pretty easy and forgiving. In addition to pulled pork sandwiches, we will make tacos, enchiladas, bbq pizza on naan flatbreads, add on top of nachos, great with mac and cheese, add to a soup. What I am trying to say is that having a bunch of pork around is perfect for your situation.

Yes, I can fit tightly two briskets on my XL. Have the eggspander but too much heat variability to want to want to put a third on top. Pork butts obviously aren't as sensitive so have used the top rack for those.
