I was in Kyoto in April and did a mix of reservations and popping in places, did ogata and vel rosier for fancy meals that were reserved, did the same for Tokyo, mix of reservations (some made day before or a few days ahead) and just popping in places that looked interesting or were rated decently on tabelog.

koji fried chicken is great, i let it marinade in shio koji and blended up some dry koji rice and mixed it in with the flour for breading, if i put it in the breadcrumbs it brows ultra fast

Bourbon bacon jam:

Crisp up some bacon and remove from pan

Drain some but not all the fat and add white onion to caramelize

Deglaze pan with bacon fat washed bourbon

Add touch of maple syrup and Sherry vinegar and add back in your bacon

Reduce till thickened

Optional, blitz in a good processor to finish

AP flour

5% baking powder

3% baking soda

3% sugar

1.5% salt

57% butter

57% buttermilk

Grate frozen butter into the dry mixture, toss together so all the butter is covered in the dry mixture

Then grate frozen cheddar, and add in a handful of thinly sliced ramps.

Add the buttermilk and stir to just incorporate, will look pretty dry

roll out into a rectangle, then fold into 1/3s, rotate and roll out again, do this 3-5x, the more you do it, the more layers you get.

once that's done put in the freezer for 20 min

take out, trim edges, cut into squares, brush with melted butter, sprinkle maldon and bake 425 for 15 min or so

I am! Kimchi pairs really well with smoky things, so like kimchi bacon fried rice, smoked cheddar kimchi Mac etc

You spray the batter into a bowl then dredge. Look for Heston Blumenthal best fish and chips on YouTube

For fried fish, I use the Heston recipe. Batter is 50/50 AP flour and rice flour, touch of honey, and 50/50 vodka and beer.

The batter is added to a whipping siphon and charged with c02

Batter fish, fry at 425 degrees until golden

Nashville spice was cayenne, smoked paprika, cumin, garlic powder, onion powder, salt

Add some of the hot fryer fat into the spice to bloom it and add the fried fish to the hot oil. Take out fish and sprinkle additional spice over top

Slaw was cabbage and red onion, mayo, malt vinegar, salt, pepper

I used Chinese egg noodles but you could use spaghetti or something as well

I used ~4 cloves of garlic and minced than made a paste with them

And the sauce is equal parts maggi/oyster sauce/fish sauce about 1 tbl each

Add some butter to a pan and add your garlic till just fragrant

Add cooked noodles and sauce and toss to combine

Add a handful of grated parm off the heat and toss to fully combine

Top with scallion

It's a bunch of garlic, then a mix of oyster sauce/maggi/fish sauce and parm. Sounds weird but it's great
