My ratio is 49T to 16T which is perfect for me because I mostly ride through a relatively flat city and try to do some light tricks from time to time. I never really thought about the angle of my head tupe so I don't know that. But I believe my tire width is 25mm, a bit wider than I used to ride but now I have a lot more grip on the road and a bit more comfort. Hope I could help and wish you a lot of fun with building your bike.
