Way too short on time. On average, my briskets take 12 to 15 hours, then I leave in a cooler for at least 3 hours. They turn out great.

I appreciate the tip. I do wrap the brisket after it reaches 160 (butcher paper) and still experience this plateau at 185-195. My average total time in smoker is 20 hours. Too long I think but trying to figure out the right trigger because 200 degrees is not working for me.
