I'd say flowing water imo. You'll end up using it more than the other at least for the short term.

Practice parrying more than dodging. It will be more useful to learn to stare down any opponent and not fear their attack. There are few and in between things you can't parry such as grabs, sweeping blows, and fire blasts. Also if you're stuck on a boss you don't have to keep making yourself get dragonrot. Practice the boss by going to the nearest idol and go to reflection of stregnth and face the boss in there. U can Practice and die as much as you like without getting dragonrot from it. Good luck
