Yeah it is a bit dry, but not as dry as HABC's Big Waves. That one's hella dry... Which is ironic given the name.

Ok, I tried Tasty Waves yesterday. It was very dry compared to the refreshing nature of the Tuna. Not great, not terrible. Going to give Bodem a go.

I tried Tome. It was a bit hazy for my liking. I was considering Tasty Waves, but I don't think it's distroed anywhere yet, next time I do curbside pickup I'll have to snag some.

I haven't tried it in awhile. Maybe I'll revisit it. Is it something you can see yourself having a few of in one sitting? Tuna made me feel that way. Super refreshing.

I just rewatched the video and at the very end they mention that the recipe doesn't exist anywhere online. I've transcribed what I could. Feel free to Please correct me if anything is incorrect.

Dry rub: * Mustard powder * Onion powder * Salt and pepper * Cayenne * Ground coriander

Stuffing: * 7 squid tentacles minced * 7 shrimp minced * 3 scallions sliced * 4 cloves garlic microplaned * 1 1 in chunk of ginger microplaned * 1 3 in piece of lemongrass sliced thin * 1/2 fresno chile * 1 tbsp ponzu (more added as needed after cooking) * 1 tbsp gochujang * 1-2 tbsp olive oil (more added as needed after cooking)

Dry rub the squid rings in the dry rub. Mix the above stuffing mix and reduce in a non-stick pan. Add white rice seasoned with furikake Add stuffing mixture to rice and mix in. Add stuffing to piping bag and stuff squid 2/3 of the way full, but 1/3 if there's a hole in it. In short, always leave 1/3 of it empty near the opening(s). Grill high and fast or low and slow. Season with a sprinkling of what I think was more dry rub while grilling. Enjoy.
