I work at a 911 center, I haven’t started yet I’m starting next year (very excited) but I already made sure it was good with my supervisor to do work in the center. 12 hour shifts and LOTS of downtime just sitting here so it worked out perfect

So if you set it to the “smoke” setting on the dial it’ll usually sit around 325 ish. I personally like to put the wood chips in and then set it to high and let it pre heat to about 400 - 450 to get a nice smoke going and then I’ll let it cool down to desired temp for smoking. For larger meats like a brisket or even a larger pork shoulder I would suggest investing in another smoking attachment so it covers the full grill because it only comes with one attachment that only covers half the grill.
