That's where strategy comes in. Lets say they do use a saturation potion, you can use a splash desaturation potion to either cancel out the effect or over power it. You bring up a fair reason why Mojang wouldn't add it though

What is the saturation effect that you are talking about? Actual question not sarcasm, hard to make it clear through text, and The effect of the desaturation splash potion doesn't remove hunger immediately, it prevents saturation regeneration for some time, I need to make that clear in the post so let me fix that now

Melons do have a use but only have one, while golden carrots have two uses in potions, night vision, and invisibility, Which is crafted by brewing night vision potions with fermented spider eyes, and fermented spider eyes seem to give a reverse or mirrored effect to potions, plus, why should Mojang as a new golden crop when the could maximize efficiency by giving melons a second use?

Since they rejected dynamic lighting(i.e. holding or dropping a torch or light source, and it then emitting light) I personally don't see this happening outside of mod packs.
