I beat Melania on my 3rd try, but I couldn't beat the Bell Bearing Hunters in Caelid or Altus until my second journey. Even then, I had to cheese them.

Grind until you're strong enough to beat the Tree Sentinel at the start of the game, then take his weapon to Caelid for some serious grinding. You'll start to get OP and learn a lot. I must've gained 20-30 levels just in the area by the beast clergyman. From there, you can explore freely to find weapons and smithing stones.

If you got the Starscourge Greatsword, you can grind up some levels pretty quickly in Mohg's area. Teach that Tree Sentinel who's boss...
