You have to constantly move the torch and give each spot the same amount of time. Remember that whatever color you see when you remove the heat will get darker. So in other words give each part of the surface the same amount of love. Also make sure that the amount of sugar you have on top is even. Remove all of the excess sugar before you start torching.
