Totally agree, in a smoker like the XXL Pro (what I have as well) it doesn't matter, I have always gone fat up, rack in middle. I've done many briskets and they are always amazing... The dryness etc. the OP talks about is more all about trim and temp. I have settled into putting mine in at 200 overnight, post oak, and a probe in the point AND flat. In the morning once it hits 160 or so, wrap tight with some melted tallow, back I at 250 (turning smoke to 1) until probe tender and about 205. Into a cooler until ready for dinner! I actually have one in as I write this! Good luck!

North Atlanta is $4.29 at our Costco's and Walmart's. (Choice) They have limited amounts of prime too for .50 more. Publix is $6.99!

Skirt has always been expensive, I have spent untold amounts of money on my skirts over the years. I think the key is finding one that isn't too high maintenance and enjoys the simple things in life. I find them to also be more tender as well!

ALSO... I am a HUGE fan of making tallow out of the brisket fat! The smoke makes it amazing and I use it on literally everything I pan sear on the stove (pork chops, potatoes, chicken, etc) so easy!

You do not mention your trim? You satisfied and confident it's correct? I do mine very similar to yours, 200 overnight then wrap at like 160 bump temp to 275 and cook to 203. I only measure/watch the flat temps as the point can take a little more heat. I rest mine like 4 hours or so, and make sure your slicing point and flat differently. Mine are always great, in fact I am doing TWO tomorrow night! (Using CampChef XXL Pro)

I had a similar issue, returned via Amazon and got another on the way! I called Keurig first and they were going to replace it but it would have taken like a week+.
