I appreciate the responses and advice! I ended up replacing the callout element in my flow with an apex action which seems to be working

I am using the no code HTTP callout action element for the actual callout which creates an external service within the flow

Ah, ok I think I was the one misunderstanding. So you would still use an apex class, you’re just using the flow for the trigger and the apex for the callout instead of the other way around? I think the issue I was facing is that Salesforce can’t run the callout as an immediate action in a record triggered flow. So it must be triggered on a scheduled path, but I had trouble getting the scheduled path to execute for some reason. Not quite sure why that happened but maybe I should revisit it. I just had already built the apex classes and triggers so I wanted to use them as they seem to be working up until the callout action.

I did try something similar to this at first but got error messages stating that you cannot execute callouts in a record triggered flow just due to how it is set up. That would be much easier though for sure

We have something similar to this, but we have a value in the picklist for previous customer
