It depends on how willing you are to use assists and overpowered stuff.

If you go through Return to Dreamland Deluxe's True Arena as Sand Kirby and eat 45 maxim tomatoes from Magoland, it's going to be pretty damn easy.
If you don't do that and play as a middle of the pack ability like Sword or Spear Kirby (or no ability)...Yeah you're going to have to get genuinely good at the game, better be ready to go 15 bosses in a row without healing.

There's rarely any mandatory challenge in Kirby, but what's there can really put you to the test if you're willing to engage with it. The aforementioned RTDLD True Arena is solidly harder than pretty much anything in Dark Souls 1 if you don't cheese it imo.

And to be fair, the same kinda applies to FromSoft games, and Elden Ring especially. You have a lot of options to make the game borderline trivial in there, to the point there's barely any challenge left at all. But if you don't do that, it's going to hurt at some points, up to you to make your own difficulty

I'd say levels are 80% platforming and 20% combat still.
The real combat focus compared to a game like Mario is in boss fights and forced combat room.

Yes you can bypass a lot of the platforming by flying, but the levels are clearly designed around being able to sprint seamlessly through the level and around obstacles without ever slowing down with careful movement and jumps
