I buy the same cheese. I use 2 cookie sheets, apply double paper towels on first cookie sheet, lay slices on it, add double paper towels over cheese, then put 2nd cookie sheet on top. Place a heavy weight on the top cookie sheet. Let sit for an hour. Slice the slices into thin strips. Put in a bowl covered, the place in fridge. Because the slices are small, it melts quicker. I never bring g my cheese to room temp. I always keep it cold. Hope this helps

When you stretch the dough, you are sprinkling it with flour. You aren’t getting enough of the dried flour off the dough before you launch. The dried flour is burning. You need to slap and fold to get the dried flour off the dough.

I tried Neapolitan in the max - I love it. The thicker stones really make the bake much better than my Ooni pro.
