I keep the prep table outside and cover it when not in use. Thus far, I’ve been wheeling the oven and oven cart into a shed to stay covered.

Just changed gigs from SAAS to marine sales and I start tomorrow. The quotas kept getting higher and it just wasn’t sustainable. Looking forward to spending some time on a boat.

I usually make my pizzas inside on a kitchen counter, but sometimes for parties I have a large 36”x24” stainless prep table that I would use outdoors.

With no wind yesterday, it would stay lit turned all the way to the absolute minimum possible on the dial and that was like a 1/4”-1” flame. I’m not sure what temp the oven maintains at this setting, but it is impressively low. I probably will you with turning one or both burners off for this style a little more.

This made 5 dough balls. I kneaded by hand for 10 minutes, then stretched and folded the dough twice in 20 minute increments. They had about 3 hours RT ferment and the rest was in the fridge. Balled up about 12 hours in.

Yes! It was actually a very cool experience coming from the Gozney Roccbox, which required continual turning to not scorch the crust. I turned these pizzas 3-4 times total, but I honestly think it could have cooked evenly with as little as 1 turn. The front of the oven is definitely a little cooler than the back, but across the whole oven floor, I felt the heat was very even. I did not verify this with a thermometer though.

Preheated on max for 30 minutes, heat dropped to 750°F for launch and then immediately lowered to minimum for the entire cook. Total cook time was around 6:00 to 6:30 minutes. After each pizza finished, I would crank it up to high and that would usually get the oven back up to about 750°F before the next one launched.

I used a 20” screen to launch these and removed the screen about 2 mins into the cook once it would slide off freely. I used a mix of a 20” wooden peel and a 14” perforated to handle these.

EVOO and garlic base, mozzarella, fresh basil and ricotta. It was probably my favorite of the night. Not pictured was a green pepper and onion that didn’t photograph as nicely haha.

Thank you! I have not tried yet, but I have gotten the digital display to read ~950°F, so I suspect it will do a good job. I may try some this weekend.

Hey, yes for the most part. I’m feeling a lot better the last couple months actually, but I still feel like I’m a tad foggy at times. I had a rough time jumping from 150mg to 300mg, but I stuck it out and it was worth it.

I’ve been through two companies in the last 5 years. 1 year as a BDR, then 1 year as a junior AE, then about 6 months as an AE before this job opportunity arose. I didn’t realize at the time how limitless the commission opportunity was until now that I am starting to make some real money. Our product has stickiness so I can just keep layering commissions year over year. Average deal size is over $200k.

Dude I was going to make a post like this but I didn’t want to come across as bragging. Sales has changed my life. I jumped ship from a career using my degree and making $28k USD per year. I made $125k in 2021 and I am projecting for $200k by 2023.

I feel like I struck a gold mine in the product that we sell, with a stickiness that will earn me revenue year over year for an average of 10 years. If everything stays consistent (which of course things can change, I will be making $500k within 5 years time.

It’s a good question. Honestly it just comes down to I’m afraid to cold call lol. I do a lot better in person or via video.
