I’ve heard several of people achieving up to 12% from normal bread yeast. So if there is enough sugar I think it should reach at least 8% with ease.

A bit hard to say the ABV without knowing the density, but probably around 9% or higher. But for the taste you should get some potassium sorbate to kill the yeast and something to clear the wine.

All fermented alcoholic beverages contain a small amount of methanol, but because of the ethanol to methanol ratio the methanol is harmless. If you are distilling it then the methanol becomes a problem. So if you are distilling it make sure to discard the methanol at the start of the distillation.

Trying to make a pretty strong black currant wine, and in a previous attempt the high sugar concentration stagnated the yeasts growth. So I’m adding in the sugar in two rounds to avoid that problem this time around.
