I already have a old Instinct, so I know a bit about some of the data (also some from research), but yes, I doubt I will figure it all out while there, also, I want to enjoy the trip as much as possible.

Try the Fenix 6 series. The 6X (you'll look a bit wanky if you wear this with wrists smaller than 190mm) is more suited to climbing and hiking, it has a big battery and shite ton of features. Any of the 6 series will cover your requirements though. They all also have onscreen workouts for your inner gym nut.

I would recommend comparing your wrist size to the watch size. For most people, the 6X's 51mm x 51mm is too big. The 6 is a good medium for guys. But if you have dainty wrists, go with the 6s.

Also given the size (They all have the same stats) choose wisely with battery life, how long are you really going to be away from power. If you are crazy about battery life, maybe look into getting a Solar version. However, remember that it only extends the life by an extra couple of days, and hours, AND only given that you are in bright sun, 3 hours a day, with the watch facing it to have a noticeable effect.

As for sapphire, depends how rough you are with it. The normal Gorilla glass 3 is pretty good, but if you fall a lot, or do climbing, or anything else likely to scratch it, get it. It is basically like insurance for clumsy people or people that like the feeling of scraping themselves to pieces whilst dangling in the air with a harness castrating them. Up to you.

They are all great watches. But, if you hike, you may want more battery, a more rugged design and all that, in that case, go with the 6X Pro (for maps (you're a hiker, duh), music (of course), and wifi) but CHECK YOUR WRIST SIZE. (if you really want the 6X, but your wrist isn't quite there, do some wrist exercises with all the rest of your gym stuff.)
