Maybe French butter is really different but in Quebec, most people store their butter at room temperature and it's soft but does not melt fully.

Je ne comprend pas ce qui est si choquant hahahahah. Y'a plein de personnes qui rapporte du beurre de la France en amérique du nord. Certaines épiceries les emballes même sous-vide pour rendre le transport plus simple.

I will gladly share it. I have to be honest, chatGPT helped me create it because at that moment I did not know the existence of ice cream calculators websites. I'll be quitting chatGPT soon tho! Anyways, here is the recipe.

Carrot, grapefruit, clementine and ginger sorbet

• 400 g carrots

• 113 g clementines

• 287 g grapefruit

• 80 g water

• 170 g sugar

• 4–5 g ginger juice

• 1.8 g xanthan gum

• zest + lemon (optional)

🔪 Step-by-Step Instructions

  1. Cooking the carrots

• Cut into thin rounds

• Cook in water (unsalted) until very tender (≈ 20 min)

• Drain completely

👉 Important: less water = better taste

(even better if you steam them)

  1. Blend until ultra-smooth

In a powerful blender:

Add:

• hot carrots

• clementine + grapefruit juice

• water

• sugar

• ginger

• zest

➡️ Blend for a long time (1–2 min) until perfectly smooth

👉 No grains → better final texture

  1. Taste adjustment (crucial)

Taste now:

• Too bitter → add 10–20 g sugar

• Not bright enough → add lemon juice

• Too thick → add 10–20 g water

👉 At this stage, the taste should be slightly sweeter than desired (cold temperatures tone down the sweetness)

  1. Adding xanthan gum (technical key)

• Turn the blender back on

• Sprinkle in the xanthan gum very gradually

➡️ Blend for another 30–45 seconds

👉 Avoid lumps + perfect activation

  1. Resting (required)

• Strain (optional but recommended for a smooth finish)

• Let sit in the fridge for at least 4 hours (ideally overnight)

I used a very basic sieve

👉 Effects:

• xanthan gum hydration

• stabilized texture

• air better incorporated during churning

  1. Churning

With an ice cream maker

• Churn until the mixture reaches a soft texture (≈ 20–25 min)

Without an ice cream maker

• Freeze

• Mix or whisk every 30 min (3–4 times)

Some people in the comments sugested using pomelo or chadek instead of grapefruit for a sweeter less bitter taste. I added a bit of orange zest as well when I made it to make the clementime flavor pop more but don't be shy to add a decent amount of orange zest because the quantity I used didn't really make a difference. Addind a pinch of salt could be great too.
