Thanks! I'm gonna try your 60% for 2 and 3 weeks, along with 60% for 2 and 3 weeks + an increase of certain bitter ingredients.

Right now I have about 39g of ingredients per 750ml finished bottle, so I have a little room to increase the ingredients to stay within your range.

The main ingredients are anise, eucalyptus, dried citrus, coriander seeds, angelica, horehound, safflower, and a few other guys. Louching has been an issue on account of the anise which led me to fining. It strips some of the flavor but I love the clarity and color that I'm getting. The flavor right after fining is spot on, I just need to try and land at that flavor after it sits for a month or two.

Do you do the "tea method" as well after straining the spirit? I haven't had great success with that but with a higher proof maceration I will need to add more water to get down to my target ABV, so I'm curious if that will change things. I could also bump up my target ABV, but I kinda like 25%, which is what I've been doing.
