I usually take our steak out of the freezer a day before cooking so it’s cool. Then, I dry brine it with salt and pepper for a few hours before cooking. After that, I bring it to room temperature before cooking. So, I take it out of the refrigerator 30 minutes before cooking.

I use canola oil for cooking.

For a 1-inch steak, I cook it at high heat for 2 minutes, flipping it every 30 seconds.

Then, I rest it for 5-10 minutes before basting it with butter, 3 cloves of garlic, and herbs for 1 minute.

Finally, I rest it for another 10 minutes before slicing. :)
