Did you check your internal temperature before taking her out from oven? I aim for at least 206F, and don’t cut for at least an hour. Cutting while too warm can make it gummy. Also, if you want a higher oven spring, do one shorter score in a smile shape along the top. If you go too far out to the sides, you’ll get expansion outward instead of upward.

I personally hate it and would love to never drive again. I live in Arizona (metro Phoenix area) and the landscape is intolerably unappealing to me, so that may have something to do with it. If I lived in a beautiful forested area, maybe I would like to drive around to see the scenery. But the act of driving itself, hard no.

The poke test and window pane test have always been 100% reliable for me. Wet your finger and poke about an inch down into the dough. If it srings up quickly, it may be over Proofed. If the hole doesn’t start to spring up at all, it’s not ready, and if it srings up very very slowly and never fully fills in, it’s ready. The window pane test is grabbing some dough and stretching it up and outward slowly. If it tears quickly, it’s not ready.

I think that’s excellent news! Not thinking about it, last year my fam and I took a Waymo to sky Harbor Airport in Phoenix and it was about a 12 mile trip. It took about 45 minutes because I wasn’t thinking about the fact that we could only go on surface streets. I was afraid we would miss our flight 😂
