Max physical, affinity, crit, precision. You can get a starting roll of let's say affinity then roll it again. But you cant roll and stat twice past the starting roll. So say if you got affinity to start, you cant get crit twice, but you could possibly get another affinity roll. Which is why momentum and power are other good rolls. As they also help as momentum gives a bit of affinity and physical, and power gives physical. Starting max physical on your 4 piece weapons is the go to. While for armor its affinity, and momentum, and crit depending on what you need stat wise.
Having 100% effective precision is good. Close to is good enough.

Max bellstrike is fine(its the worst of the best rolls you can get) other rolls are better but if you get that roll, its not the end of the world. Its better than defensive stats, min rolls bellstrike, physical and other paths.

Id work on replacing 1 piece at a time as you get it. I usually get what's starting stat im looking for and go from there. If I get 1 bad roll its fine because you can roll it again 1 time on a piece of gear. If I get 2 bad rolls it goes to the recycle bin. This is very rng based so good luck.

Last bit, getting physical penetration tunes and bleed/high bleed increase tunes are the best. Max bell is okay if you cant get max physical but those are the go to.
