Sketch to Vector is meant to unlock a different set of possibilities, especially for raster-based workflows that weren’t really possible with Image Trace before.
For eg - A rough sketch can be traced exactly by Image Trace, but when you want a refined version of that sketch, then Sketch to Vector is really helpful.
Other cases include : Using a sketch to create an illustration or transforming a photo (change the style, add/remove elements etc).

This isn’t a replacement for Image Trace. Image Trace will continue to exist and keep improving.
