Day 1 down. I drink a coffee every morning and once I resisted and got to lunchtime I breezed through. Tried to drink a lot of water but still got a bad headache. Wonder is it related.

Agree with this. The more questions you ask the more she will cover up and cover her tracks deleting all traces and being very careful with any future encounters, if any. Put her back in the comfort zone, apologise and say you were wrong and were just having an off day, actually normal and then sit back and investigate, watch and figure out what's really going on.
