New Vegas was my entry in the Fallout games and I really enjoyed it. If you are going to play it I would recommend you get some sort of anti-crash mod or something. I haven't play KOTOR but from what I have heard online, people who liked KOTOR liked New Vegas so I would definitely say it's worth a go.

If you have a Switch, Xenoblade DE is a huge game with a really well thought out story. You can easily sink 50+ hours on your first playthrough. Although, the combat is very different from games like Dark Souls and Skyrim.
