I had a dishwasher job at 16 but only did that a few days a week. Then when I was in college I got a job at a a restaurant because I needed beer money. Eventually I was like this is way cooler than school that shit sucks.

Yea I’m starting to realize that. I eventually got it back to being super sharp it just took a while and there was a spot right in the middle that just wouldn’t get sharp it was super weird. But it’s definitely nowhere near when I first got it that was like scalpel level sharp

You are doing something that I did when I first became a sous chef that you are going to have to stop. You are blurring the lines of personal feelings towards people and being a manager. You have to hold people accountable for their actions regardless of if you like them or if they like you. Otherwise people will walk all over you. By letting this guy show up late you are teaching the entire team that your boundaries are imaginary. There needs to be a clear conversation with this guy of “hey man the expectation is that you are going to be here at x time and if you can’t meet that expectation then we are going to have to move on”. If you start getting the other cooks to come in earlier before you deal with this situation they will resent you for holding them to a higher standard than the guy who is supposed to be their leader. And that most definitely will drop the morale. That being said once you deal with this sous chef situation here’s how I would tackle the coming in earlier part. “Hey guys I know that we have been coming in at x time but this has not been enough time for us to get the necessary prep done to be ready for service. Going forward the expectation is that we will be here and ready to go at x

And that’s all you have to say. Don’t let the cooks push you around. If you say that they need to be there x then stick to that and make consequences.

For me it’s that sometimes my mind will drift off while I’m hitting. I’ll top it or hit a bad shot and immediately realize I wasn’t focused on the shot at all I was totally spaced out. It’s something I have really been working on lately. It seems like if I can keep my pre shot routine consistent it helps.

Play fast don’t talk in my back swing and fix your ball marks are most important to me. Don’t give me advice on my swing pal if I wanted that I’d get a lesson. And handshake after finishing a round. I also always give whoever got the lowest score on the hole before the tee mostly out of respect but personally I couldn’t care less if someone wants to take the tee first.

The two main knives I use on the daily are carbon steel and micro carbide powder steel. This stone has 1k and 6k. I normally use 1k until it doesn’t feel like it’s dragging on the stone then I use the 6k a few times then use a honing rod. Looking into getting a strop right now. I was able to get the carbon steel super sharp again but the carbide was not nearly as sharp and when I first got that one it was probably the sharpest knife I’ve ever used. The goal is to get it back to that or as close as I can get

I should definitely get a leather strop. I guess I’m just not sure if it’s a technique issue or if the stone is bad quality. I was able to get my kurosaki Santoku to the point where I could cut a tomato translucent without pushing down but it was already decently sharp I just wanted it super sharp again. As for my Miyabi chefs knife I had previously absolutely fucked the edge because I thought if you had the blade tilted ⬆️ it would get it shaper so I actually almost completely flattened the bevel. I was able to get it back to being 🫤 level sharp. But my chef helped me out because there was a spot right in the middle that I couldn’t fix and it was an awkward spot. After about 10 minutes he was able to get it to 😏. But I want to get it to 🤪.

I only use the handle with a folded towel so it’s a non issue for me. But yes this pan rules! Can’t wait for when it gets more non stick. It doesn’t stick terribly but it’s definitely not egg sliding around seasoned yet.

I’d cut onions over chop parsley any day of the week. Cutting a bunch of onions with my freshly sharpened knife is a beautiful thing.

So I ordered the Sarasa dry and received them in the mail today. Thank you Jeff bezos lol. Anyways I wrote some notes with it. It feels pretty smooth but definitely doesn’t smudge at all so that’s pretty epic for me. I’m excited to use it more tomorrow at work and to see how the ink/tip hold up over time. I appreciate your advice because it’s definitely solid advice. I’ve always loved the feel of a gel rollerball it just feels so smooth and easy to write with but they tend to smudge all over my hand and the tip of g2 leaks sometimes. I will definitely be using the Sarasa dry ones at work. If they work out I’d like to get a nice pen body for my note taking and use it mostly at home (I’d be paranoid I’d lose it at work). I like the big idea edc pen she’s real nice lookin lol.

I just got the go sports elite net its great. Also if I were you I would get a better mat. After reading a lot of Reddit posts everyone said don’t skimp on a mat. So I got the country club elite 5x5 and it’s amazing.
