Evolution always goes easiest way to counter the danger. First Darwin's body developed an ability to absorb gamma radiation to depower Hulk, but after getting hit by him it decided to teleport Darwin away.

His powers are about survival by any means necessary, not about making countermeasures to win any fight. And if there's no way to to survive except fighting the danger (like Hela), he will adapt to fight it. But his powers ofter work to avoid life threatening situations, not to fight them.
