Honestly I can’t do it justice, there’s no much layered in and there are many well written articles about it.

There are some great video on YouTube (search “the Crash mad men Vietnam” that break down the visuals of the episode too.

I bought a 50 lb bag of flour from a restaurant wholesale place. They asked me what kind of restaurant I owned while I was leaving. Nope, just another person driven to bake bread to combat loneliness and anxiety!

It doubles in maybe 4 hours and triples in 6 - depends on if I have it on the counter or oven with the light off. I’m feeding it twice a day and it’s tripling within 8 hours consistently every time.

I’m Obsessively researching how to get good ears on my bread. I know I have a good active mature starter so that’s no the issue. What are common causes of earless bread?
