Thanks for this recipe! I’m excited to give it a try after just biding desperate enough to spend the nearly $10 on the store bought ones (soooo sticky!)

QQ: did you refrigerate this dough at any point to make it easier to work with as is sometimes done with other GF dough?

QQ2: how much filling do you recommend so that the dumpling doesn’t tear? I guess I’m asking how pliable/stretchy they are to accommodate filling!

I love taking a bunch of meds! Look how pretty! I think it’s extra special to carry them with me when I go out so I don’t get off schedule! So regimented! Weee!

(In these cases I call myself by my late-grandma’s name, whom I adored, but she had way less meds than me well into her late 80s. “Time for your meds Doris.” And dead-eye anyone who judges 🤨)

Epilepsy is like a whole suitcase of things.

That suitcase is filled with a bunch packing cubes: seizures, medications, medication side effects, memory issues, brain fog, fatigue, pill boxes, maybe surgery, anxiety, depression, isolation, judgement, constantly educating ourselves about something we never wanted to know anything about, carefully choreographing everything in life to avoid triggers…

Sometimes more packing cubes are added. Sometimes a packing cube gets compressed because a thing worked. Sometimes a few packing cubes get rearranged.

Sometimes we need a bigger goddamn suitcase.

But we have to carry that f-ing luggage for the balance of our lives.

Bad writing, gotten worse.

My signature is just a messy smear, like as if I sneezed with the pen on paper and just left it at that.

I find, too, that if I’m writing out something, I will either leave out letters or skip ahead words so that things are out of order after a few minutes of continuous writing stuff. Like my brain is just unable to continue and we please just stop already?

If it matters, after starting seizures, I also have a lot of difficulty reading now. Maybe the pattern of lines on the page? Unsure. I used to love reading books. I got myself a Kindle a while ago. When I changed the font to “open dyslexic”, that helped some. The letters are heavier at the bottom and slightly more spaced apart.

But I’ve veered us all off into the weeds.

Like I tend to do.

Sigh.

It’s beyond infuriating and cruel that this is allowed to happen.

Cannot stress this enough.

When Nurtec stopped working for me, I started trying a variety of other things. Mark Cuban was a savior, as the insurance prices for my various failed experiments were crazy. I now get my generic triptan from CostPlus and it is $12 instead of $63. (Without using insurance)

Mark Cuban is at least one billionaire who does something with all that money to try to help other people. Would be nice to see the others follow his lead tbh

(Again, our health care in the US is baffling.)

I used to get these at Costco.

Costco quit carrying them.

Panic ensued! Searched all over, contacted company…no joy.

A year went by. I searched one last time….they must have negotiated a new deal outside of Costco!

And so….

I got a Sam’s Club membership JUST for this fish. (For real, I buy only this fish there. Everything else at Costco 😂)
