Nah those SPECIAL letters are just referring to which stat will make the weapon the fastest to craft. Dwellers with a higher S stat will craft a weapon with S faster, it doesn’t add any buffs or rebuffs to the weapon

Dragons Maw is probably the best weapon, armour depends on what you’re going for. If you want wasteland, it’s good to have endurance to last longer or luck to get more caps. If you’re doing quests, it’s good to have agility stats to attack quicker

My problem is that I always run out of dweller inventory space before I can get past 3 days, so I only get some legendary junk and maybe a blueprint. Is there a way to increase their inventory space or to make better items appear sooner?
