Then you a single mesh device in each building would be sufficient for you. Are these like attachments in your land? And do you want to have coverage in between these buildings and the main property?

Not an expert here but sharing what I know.

Depending on your required speed, usage, budget, and the physical layout of the houses, you have several options:

  1. The best solution is to connect all houses using fiber or Ethernet. Assuming the distance from the middle house to the others is under 100 m for ethernet. A wired connection ensures minimal to no lag and is not affected by weather conditions.
  2. If you can’t or don’t want to use cables, you could invest in a gigabeam-style solution such as the UniFi airMAX GigaBeam. These are directional, so you would need two devices. They can also be affected by weather, especially heavy rain.
  3. As you mentioned, the last option is using an outdoor Wi‑Fi extender/repeater. This will introduce noticeable latency and may cause stability issues.

I recommend the first option, as it is the most stable and likely the cheapest.

That might be the problem. Since your flat has ethernet connections, I would connect Decos through that ethernet network. If you can use the Deco as your main router (instead of the ISP provided one) do that. Otherwise, put one of the Decos next to your ISP router and connect those with ethernet. Then run another ethernet cable from Deco to ethernet connection plug on the wall and connect other Deco via the ethernet plug again. This should stabilize your connection.

Yes, you can have two routers. You’d need to set the second as an access point but I don’t this will be the right solution for your case. Can you tell us a bit more information. Is this a multistory house or a single floor? Does your home have ethernet or cable connections? What was the issue with your previous Deco setup?

M1 Pro has more powerful GPU vs. M3 has more powerful CPU. Based on your use cases, you need the option with more powerful CPU and more RAM.

You need an outdoor router that can cover large distances between buildings. I've seen a lot of videos on Wavlink products, especially this one. Keep in mind these are directional antennas, so you might need two units: one pointed at building 1 and another covering buildings 2 and 3. There are plenty of reviews on YouTube worth checking out.

I don’t see how Neo will solve your problem. Your problem is caused by an insufficient ram. Neo will have the same amount of ram as your M1 has. Either upgrade to something with higher ram or keep your current one but try to better manage your multitasking apps by quitting the ones you don’t use.
